She told me she wanted the Wacky Cake. I went ahead and finished making it and popped in the oven all the while thinking of the other cake. It's called Depression Cake; a kind of coffee cake. So I made that one too.
Now the way I see it is I made two cakes yesterday so my family should be extra nice and attentive to me the rest of this week or at least as long as the cake lasts. If they complain about doing an extra chore here or there, I'll just say "I made cake."
I think I just figured out the key to getting good behavior out of your family. I'm a genius.
On a practical note, neither cake has eggs in it. I suppose that's where the names come from: Wacky and Depression. They are both very tasty and they are both favorites from my childhood, so I'll share them here. Maybe you can be the cake queen or king in your house this week!
2 C Raisins
2 C Sugar
3 C Water
1 C Shortening
2 tsp Cinnamon
1 tsp Nutmeg
1 tsp Cloves
2 tsp Soda
4 C Flour
4 tsp baking powder
41/2 tsp Salt
Mix together flour, baking powder, and salt. Set aside.
Boil 1st 7 ingredients for 5 minutes. Remove from burner. Mix soda in small amount of water and add to mixture (this is volcanic action, so make sure you use a big enough pot).
Add to flour mixture and stir together.
Bake 50 minutes in greased and floured (or I just spray it with cooking spray) 9x12 pan at 350 degrees.
In the pan you will bake the cake in, Sift together three times:
3 C Flour, 2 C Sugar, 2 tsp Soda, 1 tsp Salt, 6 TBS Cocoa powder.
Put three dents in the mixture and in one add 3/4 C vegetable oil, the next 2 TBS apple cider vinegar and the last 2 tsp vanilla.
Pour 2 cups cold water over the whole thing and mix right in the baking pan.
350 degrees for metal pan
325 degrees for glass pan
Bake 30-45 minutes until done.
